These ingredients are produced by vegetables' self-protection power and are called "phytochemicals."
"Phytochemicals" are also known as the seventh nutrient in the food world, and are one of the nutrients that have particularly strong antioxidant properties.
Oxidation and Antioxidation
We humans need oxygen when we eat, exercise, and perform all vital activities, and when we convert food into the energy we need for life. However, just as the surface of a cut apple turns brown and oxidizes when exposed to air, the human body also oxidizes.
When oxidation progresses rapidly due to stimuli such as stress or ultraviolet rays, or when antioxidant power declines with age, the balance between oxidation and antioxidant power is lost. It is said that when this balance is disrupted and antioxidant power declines, it can accelerate aging and cause illness.
Vegetables that contain antioxidants help fight this oxidation.
