Recipe using GRØN pancake mix - Easy gluten-free pistachio muffins
The team at The Elephant Kitchen made these muffins using GRØN's PANCAKE MIX & PROTEIN .
This is a gluten-free dessert that is free of dairy products, wheat, and protein.
This is our next menu item, following the hugely popular lemon cake and vegan, gluten-free burdock root brownies made with GRØN pancake mix .
<Ingredients> (Makes 4 6cm muffins)
・GRØN・PANCAKE MIX & PROTEIN : 100g
・Egg: 1 ・Cane sugar: 40g
・Coconut oil: 30g
・Unsweetened soy milk: 80g
・Matcha powder: 1 spoon ・Pistachios: appropriate amount
<Recipe>
1.) Make the batter by whisking together eggs, cane sugar, coconut oil, soy milk, pancake mix, and matcha in a bowl.
2.) Pour the batter into a muffin tin lined with parchment paper.
3.) Crush the pistachios and top with them.
4.) Bake in the oven at 170℃ for 20 minutes and it's done.
* Be careful not to burn yourself when removing it.
The flavour of pistachio and matcha is super delicious.
