GRØN's Red Heat Recipe - Vegan Banana Pound Cake

We would like to introduce you to a menu of pound cakes made with GRØN protein.
This is a vegan recipe that does not use any animal products.

This menu was created by the popular chef UTOSH .

The concept this time was free food (food that anyone can eat).
He introduced it as a dish to serve at home parties and events where there are more people than he can manage himself.
*This dish contains wheat and soy, so it is also safe for vegans.

Ingredients (for 2 people)
A
Protein Blend - Red Heat 10g
・110g plain flour
・40g almond powder
・8g sugar
・1 teaspoon baking powder
・Pinch of salt

B
・100g banana (approximately 1 banana)
・50ml unsweetened soy milk
・3 tablespoons maple syrup (if you use honey it won't be vegan)
・2 tablespoons olive oil

・30g walnuts
・30g raisins

・Half an apple ・2 tablespoons maple syrup

<How to make>
(1) Sift the flour into a bowl and mix all the ingredients in A together. Finely chop the walnuts and raisins. Slice the apples.

(2) Place the banana in another bowl and mash it well with the back of a fork, then mix in B and emulsify to prevent the oil from separating.

(3) Add B to bowl A and mix lightly with a rubber spatula, then add the walnuts and raisins and mix lightly again. (Don't mix too much to avoid releasing gluten. Sometimes flour accumulates at the bottom, so mix thoroughly with a rubber spatula while keeping an eye on the bottom. If there is flour left at the bottom, you will end up mixing more even though you thought you had finished, and gluten will be released. This is what I failed at the first time I made it lol.)

(4) Place the baking paper into a pound cake mold (it is best to take the shape of the bottom and make cuts in the corners), pour the dough into 4 batches, place the sliced apples on top, drizzle with 2 tablespoons of maple syrup, and bake in a 180° oven for 30 minutes.

(5) Remove from the mold and it's done.

POINT: The key to making it delicious is to mix it quickly and gently so as not to release gluten. If too much gluten is released, the texture will be chewy and not crispy, so be careful!
